If all you damaged was the rotor then you can just replace it with the Kodiak 13" Rotor item # KR1389D.
I didn't get anywhere either with that serial number. However, it looks like your 2020 Keystone Montana 3121RL uses a inner bearing item # 25580 and an outer bearing item # 14125A. The Kodiak 13" Hub and Rotor item # KRH1378D you were looking at is exactly what you need to replace your gouged one if you want to swap out both the hub and rotor.

I checked directly with MORryde for you, who said the inside height, from the cargo tray floor to top of the tray, was 4.3 inches for the 48" x 26" tray you asked about, which is the following part:
